How to Smoke Brats

How to Smoke Brats Using Grill’n McMillian Infused Olive Oils

Smoking brats low and slow locks in juiciness while building deep, savory flavor. Using Grill’n McMillian cooking oil adds an extra layer of heat, richness, and finish that takes these brats from good to unforgettable.

What You’ll Need

  • Fresh bratwursts (uncooked)

  • Grill’n McMillian Cooking Oil
(Sriracha Oil for heat, or another infused oil for flavor depth)

  • Wood chips or pellets (apple, hickory, or cherry work best)

  • Optional: onions, peppers, buns, Sweet Heat BBQ Sauce

Step 1: Prep the Brats

Remove brats from the fridge 20–30 minutes before cooking. Lightly coat them with Grill’n McMillian cooking oil, making sure each brat has an even sheen. This helps the smoke adhere and adds flavor while keeping the casing from drying out.

Step 2: Set Up the Grill

Preheat your grill or smoker to 225–250°F for indirect heat.

  • Gas grill: heat one side, leave the other off

  • Charcoal grill: bank coals to one side

  • Pellet grill: set to smoke or low temp

Add your wood for hookup.

Step 3: Smoke Low & Slow

Place brats on the indirect heat side. Close the lid and let them smoke for 60–90 minutes, turning once halfway through.
Internal temp should reach 150–155°F before finishing.

Step 4: Finish with Heat

Increase grill temperature to 375–400°F or move brats to direct heat.
Brush or drizzle lightly with more Grill’n McMillian cooking oil and sear for 2–3 minutes per side until the casing snaps and internal temp hits 160°F.

Step 5: Rest & Serve

Let brats rest for 5 minutes. Serve on toasted buns or straight off the grill. For extra flavor, top with grilled onions and a drizzle of Sweet Heat Craft BBQ Sauce.

Pro Tip

Using Sriracha Oil during the final sear adds a spicy, tangy kick that pairs perfectly with the smoky brat flavor—especially for game day or tailgates.
